Healthy banana bread with chocolate and carrots
Banana bread is a classic example of a healthy snack. Our recipe is easy to follow and, to make this popular cake especially delicious, we’ve added carrots, chocolate and almonds.
Banana bread without sugar
From vegan to sugar-free to gluten-free – the selection of banana bread recipes is huge. No industrial sugar is used in this recipe, but it’s sweetened with ripe bananas and honey. If you prefer to omit the honey, simply replace it with an extra banana.
Recipe for banana and carrot bread with chocolate chips
For the banana bread you need a cake tin. The recipe takes about 25 minutes to prepare, or around 1.5 hours with baking included.
Ingredients
80g butter
2 eggs
50g honey, melted
1 pinch salt
250g (very) ripe bananas
100g almonds, ground
100g carrots, finely grated
50g dark chocolate, chopped
200g spelt flour
2 tsp. baking powder
Prepare the mixture
- Place the butter, eggs, honey and salt in a bowl.
- Beat with a hand mixer until foamy and light in colour.
- Mash the banana in a bowl with a fork, add to the butter and egg mixture and mix.
- Add the almonds, carrots and chocolate, mix.
- Add the flour and baking powder, fold in by hand.
Baking
Preheat the oven to 160 degrees and bake in the middle of the oven for 50-55 minutes. Test with a needle: if the needle comes out clean, remove the bread and leave to cool completely on a wire rack.
