Party recipe: creamy carrot dip with horseradish

Carrot and horseradish dip for every occasion
Dips are quick to make and add something special to any party or barbecue menu and even to your everyday meals. And they’re not only good for dipping vegetables in – the creamy sauce also tastes delicious spread on bread.
Why carrots are healthy
This popular vegetable is rich in minerals and fibre. Carrots are particularly famed for their high concentration of beta-carotene which the body converts into vitamin A. Vitamin A strengthens the immune system, inhibits the development of cancer and has an antioxidant effect.
What you need for the dip
400 g carrots
20 g fresh horseradish
1 bunch of chives
300 g of your preferred mayonnaise
pinch of salt and pepper
Method
- Finely grate the carrots into a bowl.
- Peel and finely grate the horseradish into the same bowl.
- Wash the chives and chop finely.
- Add with the mayonnaise to the carrots and horseradish. Mix everything well.
- Season with salt and pepper.
- Place in the fridge to cool for at least 1 hour.
Serving idea
Spread the dip on a small pastry base and scatter with finely chopped chives.
