Lentil salad: harmonious trio with raspberries & Sbrinz cheese
Lentils are rich in protein, vitamins and minerals. Of all the lentil types, Beluga lentils are the smallest and darkest in colour. They also have a firm bite which makes them ideal for this tasty salad. This is a dish that offers a true explosion of flavours.

Lentils are low in calories, but due to the fibre and healthy, complex carbohydrates they contain, they keep you feeling full for a long time. Pair the Beluga lentils with raspberries and Sbrinz cheese, and you’ll have a harmonious trio that's packed with flavour too. The fruity raspberries give the lentils a lovely acidity that harmonises perfectly with the Sbrinz cheese.
Lentil salad with raspberries & Sbrinz cheese
This recipe makes 4 portions and is ideal as a healthy and quick lunch or as a side for your evening barbecue.
Ingredients for the salad
250g Beluga lentils
150g raspberries
100g Sbrinz cheese in rolled slices
For the dressing, you’ll need
1 garlic clove
3 tbsp. raspberry vinegar
3 tbsp. olive oil
2 tsp. honey
1 tsp. mustard
2 tbsp. soya sauce
Method
- Cook the lentils in boiling water for 15-20 minutes.
- While they’re cooking, make the dressing: Crush the garlic and place in a screw-top jar with the raspberry vinegar, olive oil, honey, mustard and soya sauce and shake well.
- Drain the lentils and mix with the dressing while still warm. Allow to cool completely.
- Cut the rolled Sbrinz slices into rings and mix into the lentils with the raspberries.
Serve decoratively and enjoy.
